LoSoTrischetta – Low Sodium Snacks
I don’t know about you, but I love outdoor entertaining when the weather is nice. We make an effort to do as much as possible in Minnesota where we spend the winters all bundled up. It doesn’t even have to be a formal occasion. It can just be a bunch of parents who gather on the front porch as the kids hit the slip and slide and dart back and forth through the sprinkler. So, more often than not, it tends to be a spontaneous gathering.
Spontaneous is often a BIG challenge for those of us a low sodium diet. Many of our low sodium meals are pre-planned, requiring some forethought as to what low sodium items to have on hand in the pantry. When I have spoken about low sodium snacks in the past, I have reviewed all of the low sodium crackers currently on the market. Kudos should be given to Nabisco (and their parent company Mondelez) for their commitment to lowering sodium in foods they manufacture. They have created many of their favorite cracker brands in a “Hint of Salt” low sodium version.
I love a cracker that is sturdy and holds up to a variety of toppings without getting soggy. So for the low sodium snack idea I am sharing today, I needed to make sure we have the TRISCUIT Hint of Salt crackers. I love the fact that a mainstream brand has low sodium options that can be found almost anywhere, such as Walmart or another major chain. The TRISCUIT Hint of Salt crackers have only 50 mg of sodium for a serving of six crackers. I also picked up the TRISCUIT Mediterranean Style Olive, which has 150 mg for 5 crackers by comparison. Now we can gather the rest of our ingredients.
LoSoTrischetta – Low Sodium Snacks
The first step is right outside my front door. We set up our herb garden in pots all over the front porch, where visitors to our home immediately can catch the fragrance of Mint, Basil, Rosemary, and more. We are grabbing six leaves to chiffonade for our Bruschetta topping. Make sure you wash them, and set them to dry while you prepare the rest. We also need olive oil, balsamic vinegar, plum tomatoes, an onion, black pepper, a couple cloves of garlic, and some Marscapone cheese. Marscapone is a lower sodium form of cream cheese and gives us a nice creamy base for our toppings.
Assembly is a breeze, so you can get back to the party. You dice the onion and tomatoes into 1/4 inch pieces and mix them in a small bowl. Mince the garlic cloves and add them. add the oil, balsamic vinegar, and the fresh ground black pepper. Give them a quick mix until it is all blended.
Spread Marscapone cheese on your crackers and top each with a generous spoonful of the Bruschetta mix.
Cut the basil into small ribbons (chefs call this a chiffonade cut) and sprinkle the ribbons over the tops.
Grab the platter and head back out to the party to enjoy!

Ingredients
- 2 pieces medium Roma Tomatoes - cut into 1/4" Plum
- 1 pieces medium Onion - cut into 1/4"
- leaves Basil - 6-8 - cut into thin ribbons
- 2 cloves Garlic - minced
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Olive Oil
- 1 tsp Fresh Ground Black Pepper
- 2 oz Marscapone Cheese
- 1 Box TRISCUIT Hint of Salt Crackers
Instructions
- In a small mixing bowl, add the tomatoes, onions, garlic, pepper, olive oil, and balsamic vinegar.
- Mix until they are thoroughly coated in the vinegar and oil
- Lay the crackers out on your serving platter and spread approx 1/4 tsp of Marscapone on each so they are lightly coated.
- Top the cheese with a small teaspoon full of the bruschetta mix.
- Sprinkle the ribbons of fresh basil over the top and serve immediately.
